Summer Honey

Summer honey is slightly darker in color than the spring typically, and the flavor is sweeter and not quite as light but very distinct and delicious. Summer honey is usually made from thistle, clover, wild blackberries and other summer blooming plants. This tends to be the most popular of our honeys and also our largest seasonal. By this point of the season all of the hives are healthy and rearing to go so we usually get more summer honey than either spring or fall.

Fall Honey

Black Cap

Fall honey is dark and robust. The flavor is sweet bold and earthy. Fall honey is made from Goldenrod, Asters, and a wide variety of other fall blooming plants. The fall flow seems to be most dependent on the weather. too much rain, or early cold snaps can really put a damper on the fall harvest. There are some years that we dont harvest as much fall as we'd like too, especially since its our favorite here at JK Honey Farm.
